Regardless of whether you’re waking up under a tent, in a cabin, or an RV, mornings can be the best part of the day. Some people enjoy to freedom to simply roll back over and doze a little later while others put the coffee pot on and tune in to the campground beginning to wake up with early morning birdsong, babble and chuckling while they begin making breakfast. Either way, when it’s time to eat, you’ll want it to be easy and it helps if it’s half ready for you before you even begin.
Light and Simple Pancakes
You can avoid buying premade, frozen flapjacks and have your mix all ready in zipped plastic bags. Then you’ll only need to add egg and water before you’re ready to cook them. You can also mix them up completely and squeeze the plastic bags into a cone shape. Then pop them into the freezer. They will help to keep the food cold in your cooler as they thaw. Once thawed, you simply cut a small piece from the tip of the cone and drizzle your pancake batter on to your hot griddle. Add a bit of baking powder to the mix for a light, fluffy cake that the kids will love.
You can bring along a variety of toppings for your pancakes as well. Some people like bacon soaked in their syrup, and others would enjoy hazelnut spread with bananas on top. You can make them savory with the addition of chopped tomato and shredded cheddar, or top them with fruit, yogurt, and granola. Other items to consider are raisins, dried fruit such as pineapple, papaya, and apple slices, almonds, pecans, and walnuts, or pumpkin and sunflower seeds. These are all tasty additions which increase the nutritional value and give you a hearty start to your day.
You won’t be mired in a lot of clean up and soon you’ll be off to enjoy your camping day with the family.
